
Shmurah means guarded, and it refers to the wheat used for this special matza which was guarded against contact with water (which would cause the leavening process to begin) from the moment of harvesting. Ordinary, machine-made kosher for Passover matza is guarded against such contact only from the time of milling the wheat.
This artisanal matza is round, and it recalls the round matza cakes (Exodus 12) that our ancestors baked when leaving Egypt.
Our sages in the holy Zohar teach us that when we guard the matza, the mitzvah of matza protects us too. On the first night of Passover, the matza guards our faith, strengthening and nurturing our connection and appreciation of all things holy. And on the second night of Passover, the matza guards our health.
