Shmurah Matzah: 

These round, hand-baked artisanal matzahs are guarded against contact with water (which would cause the leavening process to begin) from the moment of harvesting. Ordinary, machine-made kosher for Passover matzah is guarded against such contact only from the time of milling the wheat.

This round matzah recalls the round matzah cakes (Exodus 12) that our ancestors baked when leaving Egypt.

Our sages in the holy book of the Zohar (2nd c.) teach us that when we guard the matzah, the mitzvah of matzah protects us too. On the first night of Passover, the matzah guards our faith, strengthening and nurturing our connection and appreciation of all things holy. And on the second night of Passover, the matzah guards and protects our health.

Especially this year, may we all be blessed with complete health and well-being.
